Welcome

Hi! My name is Kathleen but you can call me Kat… all my friends do. I have a secret to tell you… I am not a writer. So why am I writing cookbooks? I have been developing recipes for years. I am a gluten free baker and for several years I ran a small bakery out of my home. I have met so many people that have numerous food allergies and restrictions and they all have so many questions. I love helping them find answers, solutions and recipes. Sometimes people I don’t know message me on Facebook or email me and ask me tons of questions about being gluten free, dairy free, vegan, or raw.
They ask me about baking, cooking, and juicing. They ask me how to deal with all the foods they can not eat. So I decided to start developing cookbooks and providing support in a facebook group so I can help even more people.

So what makes me such an expert? Well I am not an expert, but I am an avid reader and researcher and I have tried many different types of diets and eating styles in my search to find a healthy lifestyle for myself.

I have been sick all my life. I have seen many doctors and tried many things to help me feel better. In 1999 when I was pregnant with my second child things really started falling apart. I was having migraines 5-6 days a week, my body was hurting all over, and I felt like I couldn’t not eat anything. I thought things would get better after my child was born but that was not the case. Things steadily went downhill. Around 2002 I started falling for no apparent reason. I started not being able to eat with out feeling really sick. I was living on pepto-bismol. I had constant brain fog. I was diagnosed with Fibromyalgia but I knew it was more than just that. I read about Celiac and thought for sure that was the issue. But I was told I was too over weight to have that. The doctors wrote me off. They told me I had to much stress. One Doctor even told me I just needed to get married!

So I took my Health into my own hands. I went off gluten in 2005. Within days I felt better! I didn’t need the pepto anymore! My headaches lessened. I started listening a little closer to what my body needed. I went off dairy. But slowly I noticed new things that were bothering me. So I went on my first juice fast for 30 days to reset my body. I felt great on green juice and have kept that as part of my lifestyle. I tried paleo and although that was to much meat for me I found being off grains helped a lot. I tried raw for a while but missed warm food. So For a while I settled into a nice space that combined the best of these diets tailored just for me. I started eating gluten free, high raw, low grains, no dairy, low sugar, no red meat, high greens, and listen closely for what my body need. In 2016 I knew I needed more change and started a whole foods plant based diet. I still bake all the yummy things but my daily food intake is WFPB. This has finally turned things around. I am loving this lifestyle!

I don’t believe that any one diet is right for everyone. I believe you have to listen closely to what you body is telling you, try lots of things to support yourself and then pick and choose what works best for you.

This journey has turned into an exciting challenge to turn food restrictions into fabulous food! I would love to have you join me on my journey and I would love to be apart of yours!
