I love sweet potatoes! I go through phases where I eat a lot of them. I roast them, bake them, mash them and fry them. I like them with some butter and salt, or baked with maple syrup on holidays. I have put them in enchiladas and in soups. But my very favorite way to have them is to make them into spicy french fries.
Homemade french fries are great. They are easy to make and much healthier than their fast food counterparts. I have to make a lot of these! Everyone in the house likes them. I don’t know about your house but in my house its rare to have everyone love the same thing. Even my sweet potato hating son likes these fries.
Give them a try and let me know how you like them!
Sweet Potato Fries: gluten free, vegan
Ingredients:
- 5 Pounds of sweet potatoes (about 5 large)
- 1/4 Cup melted coconut oil
- 1 Teaspoon onion powder
- 1 Teaspoon smokey paprika or any paprika you have
- 2 Teaspoon garlic powder
- 2 Teaspoon chili powder
- 1 Tablespoon cumin
- salt and pepper
Instructions:
Preheat the oven to 450.
Peel the sweet potatoes.
If they are long cut them in half.
Then cut them into french fries. You want to try and keep them the same thickness so they cook evenly.
Put them in a large bowl. Pour the oil over them and mix until well coated.
In a small bowl mix together the spices. Pour well mixed spices over the fries and toss until evenly coated. Spread out evenly and in a single layer on baking sheets.
Bake for about 30 minutes or until soft, lightly browned and slightly crispy.
If there are any left over store in an airtight container. Reheat in the oven just until warm. We love them with an over easy egg in the morning!
